Health and Nutrition: Coach Lora's Broccoli Salad Recipe
Healthy and nutritional eating is important for any athlete, coach and mother. Simply put, the better you eat, the better you perform. But if you are like me, you also like tasty foods and simple recipes, so I have one for you here.I am a HUGE fan of broccoli. I love it raw, dipped, steamed, as a garnish, in soup etc... when my children were young we’d pretend to be dinosaurs and eat a #foodlandscape we made. I’d have to say the #BroccoliTrees and cheeses stars were my favorite. Lately I have been craving #BroccoliSalad so I made some today. I don’t really use recipes, I just make things up and hope it turns out. This was exceptionally tasty.
Here’s the Recipe:
- Broccoli - (I use a whole head and cut it into bite-size pieces)
- Red onions diced (or rings work) - 1/8 cup
- Bacon pieces (as much as you like) I like lots! About 1/2 cup
- Sunflower kernels 1/4 cup
- Green onion (because I have lots I harvested from my #garden) 1/8 cup.
- Dressing (mix together then pour over the above ingredients then toss)
- ✅Low-fat Mayo (you could use plan yogurt
- ✅too) Minced garlic - 1 clove✅3 Tablespoons vinegar✅1/4 cup sugar or sweetener if you are #diabetic.

Nutrition of Broccoli:
I think it’s pretty common knowledge that coniferous vegetable, broccoli (Brassica oleracea) is healthy and it’s packed with nutrients including fiber, vitamin C, vitamin K iron and potassium. It is also low in sugar and fat!
