Coach Lora’s Banana Cinnamon Mini-Muffins

I just love fresh homemade foods.  These banana cinnamon mini-muffins are so great to pop in your mouth after or before a workout and are packed with potassium.  The cinnamon is also a natural anti-inflammatory. So tasty!

Ingredient list:

1 ¾ cup all-purpose flour

2/3 cup sugar

2 teaspoons baking power

½ teaspoon baking soda

¼ teaspoon salt

2 tablespoons ground cinnamon (I like mine really strong but you can adapt)

1 cup mashed ripe bananas (I used 3 medium)

¼ cup butter

2 tablespoons milk

2 eggs

(next time I am adding mini chocolate chips!  I would just fold them in after everything was mixed)

Directions:  In a large mixing bowl combine only 1 cup of flour (reserve the rest) and other dry ingredients.  Then add banana, butter and milk. Beat with electric mixer for a few minutes. Add eggs and the rest of the flour.  Fold in chocolate chips. Mix well. Bake in mini-muffin pan on 350 for 8-12 minutes. All ovens are different so keep an eye on them. Enjoy!
