Coach Lora’s Crustless Spinach Quiche
I just love eggs and they are inexpensive and high in protein. This Crustless Spinach Quiche recipe is easy and fast to make. Enjoy!
One small white onion chopped
3/4 cup mushrooms (can use canned)
1 cup cubed cooked ham
2 cups spinach chopped
1 dozen eggs
1/8 tsp pepper
3/4 cup cheese (I use a blend of jack, cheddar and mozzarella)
Sauté onions, mushrooms, ham in a sauce pan with a little oil. Add pepper and spinach. Remove from heat and add eggs stir well. Immediately pour contents into a casserole dish (I use a 9 inch round) and bake on 350° for 45 minutes or until a knife inserted in the middle comes out clean.
