Protein Energy Bites

Protein Energy Bites
Makes 15-20
Ingredients

1/2 cup peanut butter
1/3 cup honey or agave
1 teaspoon vanilla
2/3 cup shredded coconut (or use coconut syrup or powder if you don’t like the texture but like the flavor – just reduce the honey/agave)
1 cup quick oats
1/2 cup mini chocolate chips

Combine peanut butter, honey, and vanilla in a medium size bowl.  Heat slightly in the microwave to make it easier to mix. Add the coconut and oats to mixture and stir to combine.  Place in the refrigerator for 10-15 minutes before adding in the chocolate chips; otherwise, they will melt.  Once cooled, add chocolate chips and roll into 1 inch size balls. Store in the refrigerator!

These are the perfect snack to fuel you for a workout, get you through the day or use before a race.  My daughter uses them for a quick breakfast. They freeze great too so make a bunch and stock up!
